Making Veggies More Diet-Friendly

Dieting is not synonymous with compromising taste, flavor and zest. Nutritional eating can be a clear and direct path to weight loss. For the anti-vegetable lover, there are a few easy ways to make veggies tasty. Low in calories and dense in texture, vegetables can make the body feel satiated.
Whether itÕs a grilled roasted or a dip, vegetables can go from bland to scrumptious. Not to mention, vegetables are loaded with antioxidants.

As far as grilling is concerned, certain vegetables are better suited than others. HereÕs a list of hearty veggies that can endure

„ Asparagus
„ Carrots
„ Cauliflower
„ Corn on the cob
„ Eggplant
„ Onions
„ Mushrooms (Portobello)
„ Peppers (green, red, and yellow
„ Zucchini

While many of the above vegetables can be grilled whole, they can also be chopped and skewered
to make tasty kabobs.

HereÕs how:

Grilling Vegetables

„ „ Thoroughly wash vegetables in water

„ „ Soak in water for a couple of minutes while you light the grill or set on a medium heat

„ „ Spray your grill using a fat-free cooking spray (IE Pam)

„ „ Lightly season your vegetables with salt and pepper (it will enhance the smoky flavor)

„ „ Place the vegetables on the grill for 20 Š 25 minutes. Be sure rotate the vegetables every 7 minutes for even cooking)


Oven Roasted Vegetables
The same concept works in the oven. Simply set the oven at 450 degrees. Line a baking sheet with aluminum foil. Lightly spray with a no-fat cooking spray butter, salt and pepper. Then cook up to 25 minutes (depends on the oven).

Vegetable Dips
As for dips, purchase low-fat to no fat dips to drizzle your vegetables in. As an alternate, make your own dip using a reduced fat sour cream, dill and other seasonings.
